Smoked Trout on Toast with Tomato Salad

So this is kind of like a lox and cream cheese bagel except: 1) use country bread and 2) Smoked trrout instead of smoked salmon. The trout that I bought was cooked, not semi-uncooked and sushi like. The tomato salad complemented the smoked trout and cream cheese wonderfully.

Do what you like with it, but I thought it was tasty. My "leftovers" are posted below.

ingredients
1 toasted slice country bread
1/3 cup Neufchatel cream cheese
1/3 cup flaked, smoked trout (2 ounces)
Red onion, thinly sliced
1 cup halved cherry tomatoes
Coarse salt and ground pepper
Extra-virgin olive oil
4 large fresh basil leaves, torn

Directions

  1. Top country bread with cream cheese, trout, red onion, and ground pepper.
  2. Place halved tomatoes beside toast. Season with coarse salt and ground pepper, drizzle with extra-virgin olive oil, and top with torn basil leaves.
Makes 1 serving
