Maple-Nut Granola


Saw this one in my copy of Everday Food Magazine. It is supposedly healthier because it uses less oil. Serve it with lowfat yogurt, sliced bananas, and maybe a little drizzle of maple syrup!

1. Preheat oven to 325 degrees. In a large bowl, toss together 3 1/2 cups old fashioned oats, 1/4 cup chopped pecans, 1/4 cup chopped almonds, 1/4 teaspoon coarse salt, 5 teaspoons vegetable oil, 5 tablespoons pure maple syrup, and 1/2 teaspoon pure vanilla extract.

2. Spread oat mixture on a rimmed baking sheet. Make until golden brown. 25-30 minutes, rotating sheet halfway through. Let cool completely. (To store cover and keep at room temperature, up to 2 weeks.) MAKES 4 CUPS

Per 1/2 cup: 241 calories, 9 g fat, 7 g protien, 33 g carbs, 4 g fiber

  1. Don't eat with yogurt it totally masks the nutty and slightly sweetened goodness of the granola!
