Breakfast Cake


This recipe is belongs to my brother, Travis. He is currently putting together a cookbook for his senior project at MHS. Go 'Dores! -or rather- Go Travis! You rock!

The Cake
3/4 cup sugar
1/2 cup butter, softened
1 tsp vanilla
3 eggs
2 cups flour, all purpose
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1 cup dairy sour cream

Filling/Topping
Filling:
(Mix together in bowl)
2/3 cup packed brown sugar
1 tsp cinnamon
1 1/2 TBSP butter, melted

Topping:
(Mix in a separate bowl with your hands until it's like coarse corn meal)
2/3 cup flour
1/4 cup sugar
1/4 cup brown sugar, packed
1/3 cup butter, cold

1- Preheat oven to 350 F. Grease 10-inch tube pan, or 13X9-inch pan.
2- In large bowl, beat sugar and the softened butter until light and fluffy. Add vanilla and eggs; mix well.
3- In small bowl, combine flour,baking powder, baking soda, and salt.
4- stir the flour mixture and sour cream alternatively into the sugar mixture, beginning and ending with the flour.
5-Spread half of the batter in greased pan, spread the filling over the batter. Top with remaining batter from bowl and sprinkle with topping.
6-Bake at 350 F, for 35-40 minutes or until toothpick inserted in center comes out clean. Cool for 15 minutes.
