3 Tbsp. butter
3 tsp. baking powder
1 tsp. salt
- Blend butter and sugar, beat in milk gradually. By hand is fine or the mixer works.
- Add the dry ingredients and fold in the cranberries
- Bake 350 for 30 minutes in a greased muffin tin. Makes 1 1/2 doz.
- Apply the glaze while the muffins are still hot and in the pan. When cool enough to handle carefully remove from the pan.
Vanilla Glaze: 3 Tbs. butter, 1/4 cup cream, 1/2 cup sugar, 1/2 tsp vanilla; cook over medium heat until sugar is dissolved and the glaze thickens.
