Cranberry Muffins

Cranberry Muffins
3 Tbsp. butter
1 cup sugar
1 cup evaporated milk
2 cups fresh or frozen cranberries
2 cups flour
3 tsp. baking powder
1 tsp. salt
  1. Blend butter and sugar, beat in milk gradually. By hand is fine or the mixer works.
  2. Add the dry ingredients and fold in the cranberries
  3. Bake 350 for 30 minutes in a greased muffin tin. Makes 1 1/2 doz.
  4. Apply the glaze while the muffins are still hot and in the pan. When cool enough to handle carefully remove from the pan.
Vanilla Glaze: 3 Tbs. butter, 1/4 cup cream, 1/2 cup sugar, 1/2 tsp vanilla; cook over medium heat until sugar is dissolved and the glaze thickens.
