I have had other baked oatmeal that I think is better, but I don't have the recipe. This one is great as well and I thought our little breakfast section could use a little bulking up.
I made this for breakfast on a Monday morning and it lasted until Saturday morning (that is with just me eating it). So it makes 7 good sized servings! I liked eating it with a little milk poured over the top and then popping it in the microwave for 30 seconds until it is all warm and then serving it with fresh sliced peaches.

3 cups rolled oats
1 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
1/2 cup melted butter
2 teaspoons vanilla extract
3/4 cup dried cranberries, or other favorite dried fruit, such as dried apricots, chopped.

Preheat oven to 350 degrees F (175 degrees C).In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.
Bake in preheated oven for 40 minutes.
